Sunday Funday Recipe: Paleo Blueberry Muffins
This one’s gonna be short and sweet because I’m tired as hell.
I drove to Albany yesterday to see my friend Janae and go to her boyfriend Ryan’s CD release party. He’s in a band and all cool and musical and wacky, just how I like my friend’s boyfriends to be. Check ‘em out: Karma’s Army. The show was pretty darn good, but we didn’t get to bed until 2:30 a.m., so I’m frigin exhausted and all I wanted to do when I got back to MA was shove my face with something delicious. Luckily, the parents had just gone blueberry picking, so I was inspired to make these bad boys…

Paleo Blueberry Muffins
2.5 cups almond flour
1/2 tsp salt
1/2 tsp baking powder
1 tbsp vanilla extract
1/4 cup honey
3 eggs
1 cup blueberries
Preheat oven to 300 degrees
Mix all that stuff together (there’s probably an appropriate order, but I was tired). Just make sure you add the blueberries last so they don’t get all pasty and breaky (not a word, I know). If you want to get all fancy, you can put some shredded coconut into the mix. If not, that’s cool too. They are pretty damn delicious, although the berries I used were a tad tart so I cut my muffin in half and drizzled a little bit of honey on it, which saved the day.
I’d say the level of deliciousness nearly made up for the fact that I decided to bake on a day that was almost 90 frigin degrees. I can’t say for sure that there wasn’t an additional unintentional ingredient: sweat. But you can leave that out if you want.
I’m gonna go shove my face with another one of these little heaven bombs then go to bed. Old ladies can’t party like they used to (turning 25 next week…gasp!), but they sure can eat.
